Pad See Ew ผัดซีอิ้ว

This was my go to lunch dish when I was living in Thailand, the dish is usually made with pork but I used chicken instead, you can use any kind of protein including seafood, my favorite is squid. I got this recipe from www.aaronandclaire.com, You can access the full recipe with video here.

I was skeptical and wanted to try this recipe from Korean chef but after I made Pad See Ew followed his YouTube video I found that the flavor was amazing and his video was so entertaining and very easy to follow now I am a fan.

Ingredients

  • 10.6 oz (300g) frozen wide rice noodles

  • 4 cloves garlic

  • 4 stalks Chinese broccoli (8.4 oz, 240g) (or regular broccoli, bok choy)

  • 1 green onion (optional)

  • 8.4 oz (240g) beef (or chicken, shrimp, tofu)

  • 3 tbsp neutral-tasting oil, divided

  • 2 large eggs

  • ground white pepper, to taste

Chicken (or protein of your choice) Marinade:

  • 1 tbsp neutral-tasting oil

  • 1/2 tbsp soy sauce

  • 1/4 tsp white pepper

Pad See Ew Sauce:

Chili Vinegar:

  • 1 red chili

  • 4 tbsp white vinegar

Instructions:

PREP INGREDIENTS

1. Prepare the noodles according to the package instructions.

2. Smash the garlic cloves and finely mince them. Cut Chinese broccoli into bite-sized pieces. Cut the stems a little bit thinner than you’d do the leaves. Thinly slice the green onion for garnish.

3. Cut the beef into bite-sized pieces. In a large mixing bowl, combine the beef, cooking oil, soy sauce, and white pepper. Give it a good massage. Set aside.

4. Prepare the pad see ew sauce. In a small container, stir together soy sauce, sugar, fish sauce, oyster sauce, black soy sauce (or dark soy sauce), and golden mountain sauce (or regular soy sauce).

5. Prepare the chili vinegar. In a separate bowl, mix together white vinegar and 1 chopped chili. Let it sit for at least 15 minutes.

MAKE PAD SEE EW

NOTE: If you cook more than 2 servings, I would recommend working in 2 batches to avoid overcrowding.

1. In a wok (or pan), heat the cooking oil (1 tbsp) over medium-high heat. Once it gets nice and hot, add the beef and cook for 1 to 2 minutes. When the beef is cooked, remove it from the pan and set aside.

2. In the same pan, add the cooking oil (2 tbsp). Add the garlic and saute for about 30 seconds or until fragrant. Increase the heat to high and add the Chinese broccoli. Cook for 1 minute or until the stems soften up a little bit.

3. Add the cooked noodles and pour the sauce. Stir to combine. To sear the noodles, let it sit for about 20 to 30 seconds. Give it a toss and let it sear one more time.

4. Once you’ve got good color, push all your noodles to one side. Into that empty space, add a splash of oil, crack the eggs, and scramble them a little bit. When the eggs are 80 percent cooked, stir-fry it all together.

5. Once everything is nice and evenly coated, add your cooked beef and toss it around for about 1 minute. Finish it off with some white pepper and green onion (if using).
